All Good Things … are Great the Next Day … right, Hugh?!

A few years back, I had the distinct pleasure in attending River Cottage’s inaugural Cookery Class.  Before this in person adventure, I had admired ‘River Cottage’, and it’s protagonist general, Hugh Fearnley-Whittingstall, from afar – generally courtesy of the many programs he crafted and brought to life. A few years on, I’m pleased to see that Hugh and his amazing team have embraced (and are highlighting) the importance and value of ‘leftovers’ – enough so to write a book! Cyn’s ‘P’ Soup

A hearty concoction made with make the most of leftover roasted veggies – potatoes, parsnips, pumpkin – with a generous grating of parmesan. Blend all with your stock of choice and to desired consistency. Heat through and enjoy!!  Feel free to ask if you’d like more specific instruction!
